Jackson Wyoming… or Jackson Hole Wyoming, however you call it.
As a child my family and I use to visit Jackson, which I thought we called it Jackson Hole at that time. I am not sure when the change happened or more of the drop of the word “hole” was, but it appears it is now called just Jackson.
Or maybe I just was not up to speed as to what was going on. And maybe I was not, I was a little kid after all. Even as an adult I am sure I still do not know half of what is going on. But sometimes it is best to be unaware of some things, am I right?
I still refer to Jackson as Jackson Hole, it is a habit I am not willing to break. Kind of like my beer habit. The term “hole” actually refers to the Jackson Hole Valley, which includes the town of Jackson. The hole is the area between the Teton Mountain Range and the Snake River. So I can still refer to the town as Jackson Hole and be vaguely correct.
And now that I have devoted way too much time to the world “hole” let’s move on…
So back to when I was a kid, my family and I would attend an annual craft fair in Jackson where my mom and dad would sell twig furniture that they had made. Although this is a fond memory as were the annual visits to the Bubba’s Bar-B-Que restaurant while we were in Jackson. When I told my dad of my plans to visit Jackson this year he said “are you going to visit Bubba’s?” Like it was even a question, or course I was.

Bubba’s… not how I remembered it looking!
I arrived to Jackson late in the afternoon and spotted Bubba’s Bar-B-Que right away. It’s exterior looked different than I had remembered but nonetheless I was happy it was an easy find. I found myself a parking spot and made my way inside where I was greeted by the hostess who seated me with a street view.
As I looked over the menu I began to have flashbacks of our meals and past visits to Bubba’s. Although I knew I was in the right place it did not feel right. I had remembered paper tablecloths, low ceilings, the bustle of the staff, and lastly the most vivid memory, that the building was on the other side of the street. It’s strange how my mind works. I remember the most random things, but nothing of real importance. Ask me about beer, I can rattle on for hours. Ask me about where I put my keys, hopefully you are not in a hurry to get somewhere.
It was the off season so that could have explained the non-bustle of the restaurant but something still felt off. As I gazed out the window trying to place my finger on the askewness of the situation I suddenly I spotted it.

The old building where Bubba’s use to be
Just as I had remembered, across the street, actually where I remembered Bubba’s to be, stood an empty building with it’s faded gray exterior along and a sun-bleached shadow of the “Bubba’s” sign. I was relieved that I had not hallucinated my childhood memory which now entitles me to drink more beer.

Beef Brisket at Bubba’s Bar-B-Que
My plate of BBQ arrived, a high pile of beef brisket, a side of a nice eggy potato salad, a perfectly sauced side of slaw with a soft, yet crunch slice of buttery toast. I don’t remember what I use to order at Bubba’s all those years ago but my order today brought back memories of enjoying a meal with my parents. The brisket had a nice smokey flavor to it and sauced right, although there was more sauce provided at the table if needed. I finished up my meal and root beer, because that was the only kind of beer you could order there, and enjoyed reliving my childhood memories of Bubba’s Bar-B-Que Restaurant.
Bubba’s Bar-B-Que Restaurant is located at 100 Flat Creek Drive. They are open 6:30 am to 10:00 pm with a breakfast, lunch and dinner menu. As I mentioned no alcohol is served at Bubba’s but if you are looking for a great beer option Snake River Brewing is located near by.
