You guys probably thought I forgot to post today, didn’t you?  Well since it is mid-afternoon on a Sunday I thought I should get my bum in gear and post (so I would not actually forget).  Today’s recipe is simple but is no less impressive than any other recipe I have posted over the last 25 days.  Today we make a beer salad dressing recipe.  Because there is one thing that holds true in the world of food, everything should be made with beer!  Okay, maybe not the one thing that holds true, but it is still pretty awesome to have an entire meal made out of beer, right?

This recipe was inspired by Alyssa Sandore from Midwest Beer Collective.

For this recipe you will need the following ingredients:

3 tablespoons olive oil (divided)
1/2 cup shallots or onions (finely chopped)
1 clove garlic (minced)
3/4 cup beer
3 tablespoons white vinegar
1 tablespoon Dijon or whole grain mustard
1 teaspoon honey
Salt and pepper to taste

In a skillet pan over medium heat add in the olive oil.  Warm the oil and then add in the shallots (or onions) and the garlic.  Cook until tender.  Next add in the beer, white vinegar, mustard and honey.  Reduce the heat and simmer for 4 to 5 minutes.  In this time the liquid should thicken up a bit.  Let the dressing cool and toss over salad.  And you didn’t think you could have your greens and beer too!  The dressing has a nice honey mustard taste, but much lighter.  I paired up this salad with the cacio e pepe I made the night before, using the same beer to tie the two recipes together.
