Baked Chicken Spinach Flautas Recipe

I made this baked chicken spinach flauntas recipe this morning while watching the Today Show. It was apropos as the Today Show is always making meals that would be consumed later in the day on their morning segments. Perhaps it is to give the viewers ideas about what they should make for dinner. Although this flauntas recipe would typically be a lunch an/or dinner meal I did in fact eat it for breakfast. But really who would not want to consume warm gooey cheese, spinach and spicy chicken any time of the day. Although this recipe is made with beer it is still socially acceptable to eat for a morning meal as the alcohol has been cooked out of it!

I like how I can justify beer in the morning.

This recipe is inspired by So Tasty, So Yummy shared on Craft Beer.com

For this recipe you will need the following:

2 boneless, skinless chicken breasts
12 ounces beer
2 cups water
1 tsp Kosher salt
1 tsp garlic powder
1 tsp ground cumin
1 tsp chili powder
1 jalapeño pepper (minced)
4 cups baby spinach (chopped)
12 flour tortillas (8 inch)
6 ounces Colby jack cheese (shredded)
cooking spray

Start with a medium sauce pan and add in the beer, water, salt, garlic powder, cumin, chili powder and half of the jalapenos. Bring to a boil and add the chicken. Simmer for 20 minutes, turning the meat over a few times as to give all side a chance to soak up the spicy goodness.

Remove the chicken and shred with two forks and then set aside.

Next remove all but a 1/4 cup of the sauce and place over medium-low heat. Toss in the remaining jalapenos and 4 cups of the baby spinach. Cook until spinach is wilted. Remove from heat.

Start your assembly line with a tortilla adding a small amount of chicken near the edge, a spoonful of spinach and small amount of cheese. Roll the tortilla and place, seam side down, on a baking sheet that has been coated in cooking spray. Repeat until your filling mixture is used. Coat the flauntas with cooking spray and place in a 450 degree oven for 20 minutes total, 10 minutes on each side.
